The boiler system is the most important factor affecting temperature stability and workflow, which directly impacts the quality of your espresso. There are three main types of boiler systems: single boiler, heat-exchange (HX) boiler, and dual boiler.
Single Boiler (SB)
A single boiler uses one heating element and one boiler for both brewing espresso and steaming milk.
How it affects quality: Because the single boiler must heat up to steam temperature (above 250∘F or 121∘C) after brewing at a lower temperature (around 200∘F or 93∘C), you cannot brew and steam at the same time. This “temperature surfing” process is time-consuming and can lead to inconsistent shots if not done with precision.
Best for: People who primarily drink straight espresso or Americanos and only occasionally make milk-based drinks. They are the most affordable and have a smaller footprint.

Heat-Exchange (HX) Boiler
This system has a single, large boiler that is kept at steaming temperature. A separate tube, or “heat-exchanger,” runs through this boiler, heating the brew water as it passes through.
How it affects quality: This design allows you to brew and steam simultaneously, which dramatically improves workflow. However, the brew water can overheat if the machine sits idle for too long, requiring a “cooling flush” before pulling a shot. This adds a small, manual step to the process, and the temperature stability is generally less precise than a dual boiler.
Best for: Home baristas who want to make multiple milk-based drinks in a row without the significant cost of a dual boiler.

Dual Boiler (DB)
As the name suggests, a dual boiler machine has two separate boilers: one for brewing espresso and one for steaming milk.
How it affects quality: This system provides the highest level of temperature stability and consistency. Since the two boilers operate independently at their optimal temperatures, you can brew and steam at the exact same time without compromising the quality of either. This allows for excellent control and makes it easier to pull back-to-back shots.
Best for: Coffee enthusiasts who prioritize consistency, make many milk-based drinks, or want to experiment with advanced brewing techniques like temperature profiling. Dual boiler machines are typically the most expensive and largest.
